Breakfast of Champions of SuperfoodsI
It's an Organic Waldorf Salad. Basic ingredients are Apple, Celery, Currants and Walnuts, mixed into a Cashew Cream consisting of Cashew Milk, Yacon Syrup and Coconut Syrup Nectar sweeteners, and Chrystalized Ginger with Vanilla. All topped with Goji Berries, Bee Pollen and Cacao nibs.

October Begins with FOOD
Soba Dish
Organic Brown Rice Tortillas
Brown Rice & Broccoli
Tortilla w/ Org. Raw Almond Butter, Coconut and Goji Berries
APPLES from Local Organic Orchard, variety of Heirlooms
Hummus
Kale Chips in Dehydrator
Kale Chip Recipe:
In High Speed Blender - 1 c. Sunflower Seeds (soaked)
1 medium Red Pepper
1 Fresh Tomato (medium)
1-2 Cloves of Garlic
1 Small Onion
1 T. Coconut Oil
1/2 T. Chipotle Powder
2 tsp. Sea Salt
1 Cup Water
Ribs from one bunch Kale
Blend until smooth.
Wash and tear Kale into bite-size pieces
Into a large mixing Bowl: Pour the creamy sauce over the Kale and work it into the pieces. Spread into T-fal sheets and dehydrate until crisp.
Store in airtight container, or jar.

SUNDAY September 4th - Dinner
Combined Salad Dish, consisting of 1) Radiccio Slaw, celery leaf & fermented carrot with Extra Virgin Olive Oil, and 2) a vegetable medley of : celery, cucumber, radish, Heirloom carrots, fennel, red onion on a bed of Sunflower Sprouts. The dressing is a 3 citrus lemon, orange and grapefruit with miso/tahini. Note: 2nd photo shows half-consumed dish with the dressing exposed.
A short grain Brown Rice bowl with Kombu (sea weed) and sprinkled with home made gomasio ( sesame seed and sea salt). Rice cooked in spring water, cardamin pods, Hawaiin Salt and Palm Oil.
Artichoke dish, steamed.
All Organic, as local as possible, as fresh as possible and in the range of 51% raw to 49% cooked or better.

WELCOME TO "WHAT I ATE TODAY"
Each day that I am available to post on this blog, what I eat for Breakfast, Lunch, Dinner, Snacks, Elixirs/Beverages, Superfoods, etc.will be posted. Some will have as many photos that I can make available and possible recipes when documented. A list of ingredients may be included, along with possibly the name of the dish or dishes. As a raw food enthusiast - a David Wolfe follower - a subscriber to The Longevity Now Program, and married to the most knowledgable person in this field that I know (my wife Debra), I invite your comments as to my now lifestyle of meat-free, soy-free,dairy-free, gluten-free, at least 51-80% raw food choices and most of summer days 100%.
